Double Cookies & Cream Trifle

I stopped buying birthday cakes about 8 years ago when I discovered how easy it is to make a trifle and customize it. My kids have asked for a trifle for every birthday and holiday since.
All my trifles use homemade whipped cream. My standing kitchen aid mixer for whipping my cream is a workhorse I've had for 11 years and still performs as brand new. Whipping your own cream is about 1/3 to 1/2 half the prices as the stuff in a tub and you are eliminating a lot of unhealthy chemicals. My trifle dish is standard size serving up to 18 people. (104 oz) Most of my trifles I can make for less than $20 total whereas a 1/4 sheet cake at a local grocery store is $26 before any add-ons.
Double Cookies n Cream Trifle
Why is this 'double cookies and cream'? Because there’s cookies in the batter AND cookies in the cream!
Ingredients:
1 quart of heavy whipping cream - sweetened, whipped and separated into 3 bowls. One bowl for plain cream, one bowl for Oreo crumbles, one bowl for Chips Ahoy.
1 box white cake mix OR box of white oreo cake mix
1 box chocolate cake mix OR 1 box chocolate Oreo cake mix.
NOTE: the Oreo boxes make enough for ONE layer, not two. Traditional box cake mix make enough for two layers. You only need two total layers for a 104 oz trifle dish.
14 8 Oreos, crumbled for the middle cream layers, another 5-8 for the top for decoration / garnish.
8 Chips Ahoy, crumbled for the middle cream layers (and /or add to your plain cake mix)
1 small chocolate box of pudding- don’t prepare until you are ready to assemble layers, it solidifies quickly!
2 cups of milk for the pudding
Eggs, water and oil as indicated on cake mix boxes
IMPORTANT:
Only use EGG WHITES for the white cake mix. This prevents your white cake mix from turning a darker tint or yellowish / beige.
Don't make your pudding until you are ready to build the trifle as it ony takes 3-5 minutes to set.
Steps:
Preheat oven to 325
Prepare your cake mixes according to instruction, making sure that you only use egg whites for the white cake mix. Ensure the cakes cool completely!!
Crush your cookies.
Add cookie crumbles to your cake mix if you want to.
While your cakes are baking in the oven, whip your cream.
Mix each type of crumbled cookie into your bowls of separated cream.
Begin building. Start with a cake layer: using about 1/3 of one 8 inch or 9 inch layer of cake either cut into small squares or crumbled.
Add a drizzle or spoonfuls of about a 1/4-1/3 of your pudding mix.
Add half a bowl of a cookie and cream mix.
Repeat layers, remembering to swap back-and-forth between your dark cake and your white cake.
Be sure to leave about half an inch at the top of your trifle to add a clean layer of your third bowl of plain whipped cream.
Add garnish, decorate it your way!
